Dr Jatindra K SAHU is an Associate Professor in Centre for Rural Development and Technology at IIT Delhi. Dr Sahu leads Food, Nutrition and Health Research Group at the Centre, and is responsible for teaching, research, and outreach activities in the said field. Currently, Dr Sahu’s research group focuses on 3D food printing and future foods, isolation, and encapsulation of bioactives of pharma and cosmeceutical importance, food fortification and functional foods, and stabilization and monitoring of TPC, HNEs, AGES, in cooking oils.

Dr Sahu has published about 60 research papers in national and international journals, has three Indian Patents in his credit, and edited one book on Advanced Food Process Engineering, apart from regular book chapters, manuals, and conference proceedings.

Dr Sahu is a recipient of the Young Scientist Award-2016 by Department of Science & Technology, Govt of India, the Young Scientist Award-2013 by Association of Food Scientists & Technologists of India, A J Banks Award-2011 by Society of Chemical Industry, UK, the Jawaharlal Nehru Award-2010 by Indian Council of Agricultural Research, New Delhi, the BOYSCAST Fellowship - 2009 by Department of Science & Technology, Govt. of India, and the Seligman APV Young Scientist Award - 2007 by the Society of Chemical Industry, UK. Currently, Dr Sahu is an Honorary Associate Professor at the University of Queensland, Australia and was a visiting fellow at the School of Food Biosciences at the University of Reading, UK, and Department of Biological Systems Engineering at the Virginia Tech, USA . One of the PhD scholars of Dr Sahu has been awarded by the BIRAC - Students Innovations for Translation & Advancement of Research Explorations (SITARE) -Gandhian Young Technological Innovation Grand (GYTI) Award: 2021 for innovative PhD research Project by Department of Biotechnology, Govt of India.
